Baked Chicken Sandwich

Ingredients

  • 2 slices of bread as desired (whole grain or mixed bread)
  • 2 red bell peppers
  • 3 tbsp olive oil
  • 1 ball mozzarella
  • 2 spinach leaves
  • 8 sage leaves
  • Salt
  • freshly ground pepper

Instructions

    Wash the bell peppers, halve them, remove seeds and cut into strips.

    Wash chicken breasts, pat dry and cut into strips.

  3. 3.

    Slice mozzarella into rounds.

  4. 4.

    Wash spinach, remove stems and drain well.

  5. 5.

    Blanch bell pepper strips briefly in boiling salted water, shock in ice water and drain.

  6. 6.

    Season chicken strips with salt and pepper and sear in 2 tbsp hot oil for about 2-3 minutes until golden brown.

    Drizzle remaining oil over bread slices and briefly toast under the oven grill. Then top with spinach, peppers and chicken. Finally place mozzarella slices on top, sprinkle chopped sage, season with salt and pepper. Bake under the grill for about 2 minutes until golden brown. Serve immediately.
