Ingredients
- 100 g spinach (fresh)
- 100 g mung bean sprouts (canned)
- 100 g tofu
- 20 wan-tan dough sheets (frozen)
- 1 Garlic clove
- 0.5 bunch spring onions
- 3 tbsp peanut oil
- 3 tbsp Soy sauce
- 1 Egg white
- pepper (ground)
- 1 bunch chives

Clean, wash, dry spinach and cut into strips. Drain mung bean sprouts in a sieve. Dice tofu finely. Thaw dough sheets under a damp kitchen towel so they don’t dry out. Peel garlic and press through a grinder. Trim spring onions and dice the white parts with the light green stalks.

Heat peanut oil in a pan and sauté spring onions with garlic. Add spinach, tofu, and finally mung bean sprouts; season with soy sauce and pepper and taste. Spread dough sheets and brush with beaten egg white. Spoon vegetable filling into each sheet’s center.
