Baked Tortilla Strips with Tomatoes and Spicy Salsa

Ingredients

  • 4 wheat tortillas (homemade or store-bought)
  • 3 tbsp olive oil
  • 1 Spring onion
  • 2 Garlic cloves
  • 200 g Cream cheese
  • 2 tbsp parmesan
  • 2 tbsp crème fraîche
  • Salt
  • pepper (coarsely ground)
  • 1 tsp cumin
  • 1 tsp Cayenne pepper
  • 5 tomatoes
  • 1 sprig cilantro
  • 750 g plum tomato
  • 2 onions
  • 2 chili peppers
  • 1 Lime (juice)
  • cilantro leaves (for garnish)
  • salt (pepper)

Instructions

    Lay tortillas on a baking sheet lined with parchment paper. Clean the spring onion, slice the green part into rings and set aside. Peel the garlic, combine it with the remaining spring onion, cream cheese, parmesan, and crème fraîche in a blender and puree. Season with salt, pepper, cumin, and cayenne pepper.

    Wash tomatoes and cut them into slices. Spread the cheese mixture on the tortillas and place two tomato slices on each. Drizzle the remaining olive oil over them, season with salt and pepper, and bake in a preheated oven at 200°C for about 10 minutes.

    Garnish the tortillas with the green spring onion rings and cilantro. Add extra green tomato slices if desired.

    For the salsa, blanch tomatoes, peel, core, and dice them small. Peel onions and finely chop. Core chilies and mince; mix with lime juice and diced tomatoes. Finely chop cilantro and stir in, seasoning with salt and pepper.
