Ura-Maki

Ingredients
- 4 surimi sticks
- 1 cucumber (about 10 cm)
- 0.5 ripe Avocado
- 1 tbsp Lemon Juice
- 250 g sushi rice
- 1 tbsp wasabi
- 2 roasted nori sheets
- 4 tbsp trout caviar (or red caviar from the lake sturgeon)

Halve the surimi sticks lengthwise. Slice the cucumber lengthwise, remove seeds and cut into sticks about 0.5 cm thick.

Peel the avocado, slice it lengthwise into strips and immediately drizzle with lemon juice.

Wrap a sushi rolling mat with plastic wrap and place a half nori sheet smooth side down on top. Spread a quarter of the sushi rice over it, press lightly and carefully flip so that the rice lies on the plastic.

Spread some wasabi on the lower third of the nori sheet, lay a piece of surimi stick, cucumber sticks and avocado strips on top, then roll using the mat. Form three more rolls from the remaining ingredients. Cut each sushi roll into six equal pieces and coat each piece with trout caviar.
