Ingredients

  • 1.2 kg mostly firm potatoes
  • 1 stalk leek
  • 2 onions
  • 220 g dried meat (smoked pork belly)
  • 3 Tbsp plant oil
  • 2 Eggs
  • Salt
  • Pepper
  • Nutmeg (freshly grated)
  • 3 tbsp chopped parsley

Instructions

    Peel the potatoes, grate finely and squeeze in a kitchen towel to form a dry mass. Wash, trim and slice the leek into thin rings. Dice the onions finely. Cut the dried meat into small cubes. Heat 1 tbsp oil and sauté the leek, onions and dried meat for 3-4 minutes. Remove and place in a bowl. Add the potato mass and eggs, mix lightly. Season with salt, pepper and nutmeg.

    Heat the remaining oil and fry the mixture. Cook about 40 minutes over medium heat, turning parts frequently so everything turns crisp. Finally fold in parsley and serve the dish with apple sauce.
