Baked pasta with broccoli, cheese and sausages from Spoonsparrow brings spring to the plate in no time.

Ingredients

  • 400 g penne
  • Salt
  • 4 sausages
  • 400 g broccoli florets
  • 400 g ripe tomatoes
  • 2 Garlic cloves
  • 2 EL olive oil
  • 100 ml Vegetable broth
  • pepper (ground)
  • 1 TL dried oregano
  • butter (for the dish)
  • 1 ball mozzarella (ca. 125 g)

Instructions

    Preheat the oven to 200°C with upper and lower heat.

    Cook the pasta in boiling salted water for about 8 minutes, then drain, rinse with cold water and let it dry well.

  3. 3.

    Brown the sausages in a hot pan with oil until golden brown all around, remove and cut into bite‑sized pieces.

  4. 4.

    Wash, trim and chop the broccoli, blanch in boiling salted water for about 4 minutes, then drain, rinse with cold water and dry again.

    Simmer the tomatoes, cool, peel, quarter and dice them small.

  6. 6.

    Peel the garlic cloves, finely chop and sauté in a hot pan with oil until translucent. Add the tomato cubes and broth, season with salt, pepper and oregano, and simmer for about 5 minutes on medium heat.

    Combine the pasta, broccoli and sausages, transfer to a buttered baking dish and top with sliced mozzarella. Bake in the preheated oven for 20–25 minutes until gratinated.
