Dark Chocolate Muffins

Spoonsparrow Dark Chocolate Muffins: Melted chocolate, chocolate chunks and cocoa provide a real chocolate kick!

Ingredients

  • 50 ml Milk (3.5% fat)
  • 1 egg
  • 80 g sugar
  • 80 ml plant oil
  • 125 g yogurt (3.5% fat)
  • 100 g Dark chocolate (at least 70% cocoa content)
  • 220 g flour
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1 pinch salt
  • 2 tbsp cocoa powder
  • 75 g chocolate chunks

Instructions

    Melt the chocolate coarsely over a hot, non-boiling water bath. Remove from heat and let it cool slightly.

    Whisk milk with egg, sugar, plant oil and yogurt. Stir in the melted chocolate.

    In another bowl, mix flour with baking powder, baking soda, salt and cocoa powder. Quickly fold the egg-yogurt mixture into the dry ingredients until everything is moist. Finally stir in the chocolate chunks.

    Line a muffin tin with paper liners, fill with batter and bake the dark chocolate muffins in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) on the middle rack for 20–25 minutes. Remove the muffins, let them cool and enjoy.
