Vegan Chocolate Muffins

Ingredients
- 150 g vegan dark chocolate (at least 70% cocoa content)
- 250 g spelt flour Type 1050
- 3 tbsp cocoa powder (25 g each)
- 2 tsp Baking powder
- 80 g raw cane sugar
- 1 pinch salt
- 2 tbsp applesauce (30 g each)
- 300 ml plant-based milk
- 80 g neutral vegetable oil
Instructions

Chop the chocolate and melt it over a hot, non-boiling water bath. Remove from heat and let cool to lukewarm.

In a bowl mix flour, cocoa, baking powder, sugar and salt. Add applesauce, plant milk and oil, then quickly whisk with an electric mixer until smooth. Stir in the melted chocolate.

Line a muffin tin with paper liners, fill with batter and bake vegan chocolate muffins in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) on the middle rack for about 25 minutes. Remove, cool and enjoy.
