Vegan Chocolate Banana Muffins

Vegan chocolate banana muffins from Spoonsparrow: walnuts, cinnamon and maple syrup give a special twist – bake them now!

Ingredients

  • 160 g spelt flour type 1050
  • 50 g fine rolled oats
  • 75 g ground walnuts
  • 2 tsp Baking powder
  • 1 pinch Cinnamon powder
  • 1 pinch salt
  • 3 ripe bananas (ca. 300 g)
  • 80 ml oat drink (oat milk)
  • 5 tbsp Rapeseed Oil
  • 50 g maple syrup
  • 1.5 tsp apple cider vinegar
  • 100 g chocolate chips
  • 2 tbsp lemon juice

Instructions

    Combine flour, oats, walnuts, baking powder, cinnamon and salt. Peel two bananas, mash finely with a fork and add to the dry mixture. Add oat drink, oil, maple syrup and apple cider vinegar, whisk into a smooth batter. Quickly fold in chocolate chips.

    Line a muffin tin with paper liners and fill with batter. Slice the remaining banana into rounds, arrange on top of the batter, press slightly down and brush with lemon juice. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 20 minutes.

    Remove vegan chocolate banana muffins from the oven. Let them cool slightly, release from the liners and set on a wire rack to finish cooling.
