Strawberry Vanilla Muffins

Spoonsparrow Strawberry-Vanilla Muffins: Real Bourbon vanilla provides a wonderful aroma, while yogurt makes the mini muffins especially moist!

Ingredients

  • 12 large strawberries
  • 1 Vanilla bean
  • 200 g Spelt flour Type 1050
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • 2 Eggs
  • 75 g raw cane sugar
  • 50 ml sunflower oil
  • 200 g yogurt (3.5% fat)
  • 5 g powdered sugar from raw cane sugar (1 tsp)

Instructions

    Wash, pat dry, and cut strawberries into halves or slices according to size.

    Mix flour with baking powder, baking soda, and vanilla bean seeds in a bowl. In another bowl whisk eggs with sugar, oil, and yogurt until smooth. Combine the wet mixture with the dry ingredients and stir until fully incorporated.

    Line a muffin tin with paper liners. Spoon batter into each cup, distribute strawberries evenly on top, gently pressing them into the batter. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) on the middle rack for about 20 minutes.

    Remove from oven and let cool slightly on the tin. Take out the muffins and allow them to cool completely before dusting with powdered sugar.
