Danish Apple Cake

Ingredients

  • 300 g spelt flour type 1050
  • 400 g whole spelt flour
  • 2 tsp Baking powder
  • 300 g butter
  • 120 g cane sugar
  • 1 vanilla pod
  • 3 medium eggs
  • 1 Organic lemon
  • 1250 g tart apples
  • 1 tsp cinnamon
  • 2 tbsp Maple syrup

Instructions

    Mix the flours and baking powder. Add cold, cubed butter and cane sugar. Split the vanilla pod lengthwise, scrape out the seeds and add them with the eggs to the flour mixture. Process everything into a shortcrust dough using the beaters of a hand mixer. Shape the dough into a ball and chill for 30 minutes.

    Meanwhile rinse the lemon hot, pat dry, grate the zest and squeeze out the juice. Peel the apples, quarter them, remove the cores and cut the quarters into finer strips. Mix the apple strips with lemon zest, 2 tbsp lemon juice, cinnamon and maple syrup.

    Roll out the dough, spread it on a baking sheet lined with parchment paper and arrange the apple strips in rows over it. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 40 minutes.
