Chanterelle Cheese Toast

The chanterelle cheese toast from Spoonsparrow tastes just as good for breakfast as it does for dinner.

Ingredients

  • 2 sprigs thyme
  • 350 g chanterelles
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • 4 slices whole‑grain bread
  • 80 g raclette cheese (4 slices)

Instructions

    Wash the thyme, shake off excess water and remove the leaves.

    Clean the mushrooms; leave them whole or cut into pieces depending on size. Heat oil in a pan and sauté the chanterelles over medium heat for about 2 minutes until golden brown. Season with salt and pepper.

    Toast the bread slices under a preheated oven grill from both sides until golden brown. Top each slice with one piece of cheese and melt it under the grill.

    Remove the toasted bread from the oven, place on four plates, distribute the mushrooms over them and sprinkle with thyme.
