Dandelion Avocado Salad

Ingredients
- 1 Handvoll Dandelion
- 1 Handvoll Arugula
- 2 Spring Onions
- 250 g radishes
- 2 Avocados
- 1 EL lemon juice
- 2 EL balsamic vinegar
- 2 EL Pumpkin seed oil
- Salt
- Pepper
- 2 EL Sunflower seeds
- 1 Sheep cheese (200 g)
- 4 Dandelion flowers
Instructions

Wash and dry the dandelion and arugula. Slice the spring onions into thin rings. Wash, trim and finely dice or julienne the radishes. Halve the avocados, remove the pit, peel and cut the flesh into strips. Drizzle with lemon juice.

Gently combine the spring onions, radishes, and avocado pieces together.

Whisk the balsamic vinegar with pumpkin seed oil and season with salt and pepper. Fold in the sunflower seeds and mix half of the dressing with the salad. Arrange on four plates, distributing arugula and dandelion. Drain the sheep cheese and cut into four triangles. Place one cheese triangle and a dandelion flower decoratively on each salad.

Drizzle with the remaining dressing and serve immediately.
