Ingredients
- 1 young head of lettuce
- 4 radishes
- 2 shallots
- 0.5 handful chives
- 1 handful mixed edible flowers (e.g., oregano, daisies, gundermann)
- 2 tbsp lemon juice
- 2 tbsp Apple cider vinegar
- 2 tbsp grape seed oil
- 2 tbsp Rapeseed oil
- 1 tsp Honey
- 1 tsp medium-hot mustard
- Salt
- pepper (ground)
- 500 g smoked eel fillets
Instructions

Wash, trim, dry and tear the lettuce into bite‑sized pieces. Wash and finely slice the radishes. Peel and finely slice the shallots. Rinse the chives and shake them dry. Pick the flowers and cut smaller if desired.

Whisk together lemon juice, vinegar, oils, honey and mustard; season with salt and pepper to taste.

Arrange lettuce, radishes, shallots and flowers on a plate. Sprinkle chives over the top. Cut eel fillets into pieces, place on the salad and drizzle with dressing before serving.
