Ingredients
- 1 head of frisée lettuce
- 1 head of escarole
- 2 heads of radicchio
- 250 g Cherry Tomatoes
- 2 red onions
- 500 g morels
- 4 slices of toast bread
- 1 bunch of curly parsley
- 2 tbsp clarified butter
- 4 tbsp germ oil
- 2 tbsp balsamic vinegar
- Salt
- freshly ground pepper
Instructions

Wash, tear into pieces, and dry frisée, escarole, and radicchio.

Wash, dry, and quarter cherry tomatoes. Slice onion into rings. Clean morels, optionally halve them. Cut toast bread into diamonds.

Heat 1 tablespoon clarified butter in a pan, sauté the morels, remove and set aside warm. Add remaining clarified butter to the pan and crisp the bread diamonds.

Make a vinaigrette from the listed ingredients. Arrange salad on plates, add morels, drizzle with vinaigrette, and garnish with croutons.
