Chicorée-Apfel-Salat mit Roquefort und Nüssen

- 2 sticks celery
- 2 apples (e.g., Granny Smith)
- 2 tbsp lemon juice
- 8 small chicory heads
- 8 stalks chives
- 75 g walnut halves
- 200 g Roquefort cheese
- 1 tbsp Olive Oil
- pepper (coarsely ground)

Clean, wash and optionally pull apart the celery sticks. Slice them crosswise into rounds. Wash the apples, quarter, core and cut into thin strips. Drizzle the apple strips with 1 tbsp lemon juice. Clean the chicory, wash and halve lengthwise or slice into discs. Arrange the salad with celery and apple strips on plates or a platter.

Wash the chives, shake dry and cut into fine ribbons. Roughly chop the walnuts. Break the Roquefort cheese into pieces, sprinkle over the chive ribbons and walnuts. Drizzle the olive oil with the remaining lemon juice and pour over the salad. Sprinkle pepper on top.
