Colorful Oat Salad

Ingredients
- 125 g oats
- 300 ml water
- 1 tsp salt
- 3 tbsp Lemon juice
- pepper freshly ground
- 2 tsp chopped thyme leaves
- 4 tbsp olive oil
- 1 Shallot
- 125 g mushrooms
- 50 g radicchio
- 1 Avocado
- 1 bundle arugula

Bring oats to a boil with water, cover and simmer for about 35-40 minutes. Add salt at the end of cooking. Let oats sit on the turned-off stove for another 15 minutes, then strain into a sieve and rinse cold. Peel and finely chop the shallot.

Mix lemon juice, 2 tbsp water, pepper, salt, and thyme; whisk in olive oil and add chopped shallot. Fold in drained oats, sliced mushrooms, and radicchio cut into strips, and let rest for about 30 minutes.

Fold in diced avocado and half of the arugula, taste, arrange on a plate, and sprinkle with remaining arugula before serving.
