Currant Jam with Carrots

- 800 g carrots
- 3 untreated oranges
- 500 g gelatin sugar (2:1)

Wash the berries, drain well or pat dry with kitchen paper. Use a fork to separate the berries from the stems.

Peel and grate the carrots finely on a kitchen grater.

Add the grated carrots to a pot and sauté briefly while stirring.

Squeeze the oranges, add the juice and bring to a boil.

Perform a gel test: drop a spoonful of hot jam onto a cold plate, wait briefly. If it runs when tilted, continue cooking; if firm, transfer immediately into well-rinsed jars. Seal tightly, place upside down for about 10 minutes, then cool completely.
