Ingredients

  • 500 g yogurt (0.1% fat)
  • 250 g low‑fat quark
  • 200 g whipping cream
  • 4 tbsp lavender honey (more to taste)
  • 500 g raspberries
  • powdered sugar
  • dried lavender buds

Instructions

    Wash the raspberries, set aside half for garnish, puree the rest well and strain through a sieve.

    Beat the cream stiff and keep cool. Whisk yogurt with low‑fat quark and lavender honey until smooth, fold in the cream, spoon raspberry purée onto the cream in dollops and gently fold in.

    Fill the marbled cream into glasses, garnish with raspberries and lavender, dust with powdered sugar and serve.
