Cucumber and Tomato Bites with Shrimp

Ingredients
- 125 g quark
- 12 cocktail tomatoes
- 100 g goat cream cheese
- 1 salad cucumber
- 30 g North Sea shrimp
- 5 radishes
- 1 Shallot
- Salt
- black pepper
- Herb salt
- 12 basil leaves
Instructions

Wash the tomatoes, pat dry and cut off a small lid from each. Scoop out seeds and juice with a spoon. Let the fruit drain upside down.

Meanwhile wash the cucumber, pat dry. Slice into 12 equal thick slices and hollow out slightly with a spoon.

Rinse the shrimp, pat dry and finely chop. Wash and dry the radishes; cut two into six strips each, chop the rest. Peel and chop the shallot.

Place the drained quark in a bowl, add chopped North Sea shrimp, radishes and shallot, mix well. Season with salt and pepper and spread onto cucumber slices. Garnish with radish strips.

Sprinkle tomato interiors with pepper and herb salt. Form 12 balls from goat cream cheese and press into tomatoes. Wash basil leaves, pat dry, insert one leaf into each tomato.
