Banana Leaf Pouches

Ingredients
- 4 banana leaves
- 250 g crab meat
- 200 ml coconut milk
- 1 tsp red curry paste
- 1 finely chopped garlic clove
- 1 finely chopped chili pepper
- 0.5 tsp freshly grated ginger
- 1 egg
- fish sauce
- Thai basil

Wash and dry the banana leaves. Using a small plate (about 15 cm diameter), cut out four circles. Briefly soak in hot water, then pat dry; they will shape more easily.

To form the pouches, pull the edge toward the center, fold, and pin the crease to the leaf edge. Repeat on the opposite side so a pouch forms.

Place the pouches in a bamboo steamer and fill them. Mix diced crab meat with coconut milk, curry paste, garlic, chili, ginger, and egg in a bowl. Season with fish sauce and spoon into the pouches. Sprinkle some Thai basil leaves on top and place the pouch over boiling water in a wok. Cover and steam for 12-15 minutes.
