Ingredients
- 4 slices roastbeef
- 1 tbsp alfalfa sprouts
- 1 tbsp cream cheese
- 1 tbsp mayonnaise
- 1 tsp chives sprigs
- 1 small pickled cucumber
- Salt
- Pepper (freshly ground)
- 2 apple wedges
- 10 g tête de moine (2 florets)
- honey
- Pepper (freshly ground)
- chive stems
- 1 tbsp radish sprouts
- 2 slices beetroot (jarred)
- 2 slices goat cheese
- 2 walnut kernels

For the roastbeef bites, shape two slices of roastbeef on a spoon with some alfalfa sprouts into a rosette. Whisk cream cheese and mayonnaise until smooth. Add chives. Dice cucumber finely and fold half into the cream mixture. Fill the rosettes and garnish with remaining cucumber cubes.

For the cheese bites, place apple wedges on a fork and drizzle with a little honey. Arrange the cheese rosettes on top and season with pepper. Serve garnished with chives.

For the beetroot bites, spread sprouts on spoons. Place one slice of beetroot with cheese on top and garnish with walnut kernels. Serve immediately.
