Ingredients
- 1 kg chicken wings
- 1 tsp Szechuan pepper
- 2 Garlic cloves
- 1 tsp ginger (fresh grated)
- zest of one untreated lemon
- 4 Spring Onions
- 1 chili pepper
- 2 tbsp honey
- 2 tbsp Soy sauce
- 60 ml oil
- 1 tbsp Sesame oil
- Salt
- pepper (from grinder)
- 1 tbsp chopped coriander leaves
- 1 tbsp chives rings

Wash chicken wings, pat dry and separate at the joints.

Toast Szechuan pepper in a non-stick pan and crush in a mortar.

Peel garlic and finely chop.

Trim spring onions, clean and cut diagonally into rings.

Finely chop chili pepper.

Combine Szechuan pepper with garlic, ginger, half of the lemon zest, chili, honey, soy sauce and the oils. Add chicken wings and mix well. Marinate for at least 3 hours (best overnight), then season with salt and pepper and grill on a barbecue, turning several times for about 10 minutes. Sprinkle with remaining lemon zest, spring onions and chopped herbs before serving.
