Fried Knobi Chicken

- 2 sprigs Rosemary
- 3 sprigs thyme
- 1 head garlic
- 2 lemons (juice)
- 100 ml olive oil
- pepper (ground)
- 1.2 kg chicken parts (breast and drumsticks)
- 2 Bay leaves
- Salt

Wash rosemary and thyme, pat dry, strip stems and finely chop. Peel 2 cloves of garlic and finely chop. Combine lemon juice, garlic, herbs and olive oil in a bowl and stir well. Season generously with pepper. Drizzle the chicken parts with the herb-garlic mixture, add bay leaves and marinate covered in the refrigerator for about 1½ hours.

Turn the chicken pieces once during marination.

Preheat the oven to 200°C (400°F) fan‑forced.

Afterward, salt the marinated chicken all around and place it with half of the remaining marinade in a baking dish. Separate the garlic cloves from the heads, lightly crush them and add to the dish.

Bake on the lower rack for about 45 minutes until crisp. Brush the chicken pieces with more marinade during cooking.

Remove the finished chicken from the oven and serve with rice or potatoes.
