Crispy Cheese Rolls

Ingredients

  • 2 pickled green pepperoni
  • 400 g feta
  • 1 tbsp chopped dill sprigs
  • 2 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 2 Eggs
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp paprika powder
  • 4 sheets yufka dough (Turkish grocery store)
  • 500 ml oil (for frying)
  • Mint leaves (for garnish)

Instructions

    Chop the pepperoni. Crumble the feta finely. Mix with herbs, pepperoni and eggs; season with salt, pepper and paprika.

    Lay two sheets of dough together and cut into eighths. Cut each eighth into triangles. Spread some cheese filling on the wider side of each triangle, fold the corners inward, and roll from the wide edge toward the tip.

    Heat the oil (it’s ready when small bubbles rise on a wooden spoon). Fry the rolls in batches for about 3 minutes until golden brown. Drain on paper towels. Serve garnished with mint.
