Ingredients

  • 300 g filo dough
  • 5 tbsp olive oil
  • 2 handfuls mixed herbs (e.g., thyme, rosemary, oregano, basil)
  • 400 g soft cheese (e.g., Brie, Camembert)
  • Salt
  • ground pepper

Instructions

    Preheat the oven to 200°C with upper and lower heat. Lightly oil 24 depressions of a mini muffin tin.

    Spread the filo dough and cut about 48 equal squares roughly 7 cm each. Place one filo sheet in each mold, press down and brush with oil. Add another sheet on top and oil it as well. Rinse the herbs, shake dry, and set aside some thyme for garnish if desired. Tear off the remaining leaves and finely chop them. Distribute the chopped herbs into the tartlets. Cut the cheese into about 24 small cubes and place them over the herbs. Optionally add thyme on top for garnish. Bake in the oven for approximately 15 minutes until golden brown.
