Crispy Bread Cubes in Olive Oil
Crispy bread cubes in olive oil keep you full for a long time despite moderate calorie content and support cellular health through vitamins A, C, and E.
Ingredients
- 1 egg
- 80 ml milk (1.5% fat)
- Salt
- Pepper
- 2 slices whole‑grain sandwich bread
- 400 g zucchini (2 zucchinis)
- 250 g Cherry Tomatoes
- 2 tbsp olive oil
- coarse pepper to taste
Instructions

Whisk the egg and milk together, season with salt and pepper, and pour into a shallow bowl.

Cut the bread slices diagonally in half, dip them in the egg mixture, turning until they absorb the liquid.

Meanwhile wash, trim, halve lengthwise, and slice the zucchini into 1 cm thick rounds.

Wash the tomatoes and cut half of them in halves.

Heat 1 tbsp olive oil in a large non‑stick pan. Add the soaked bread cubes and fry on low heat for about 3 minutes per side until golden brown.

While the bread fries, heat the remaining oil in a wide pot, add zucchini and all tomatoes, cover and simmer over medium heat for about 6 minutes. Season with salt and pepper. Plate the fried bread cubes with the vegetables and sprinkle coarse pepper if desired.
