Avocado Toast with Coriander
A southern indulgent snack featuring avocado toast paired with a sharp tomato juice, lightly seasoned and vibrant.
Ingredients
- 4 limes
- 300 ml tomato juice
- A splash Worcestershire sauce
- a dash Tabasco
- Salt
- black pepper
- 1 small red onion
- 0.5 lemon
- 2 tbsp olive oil
- 1 Avocado
- 2 slices sourdough crust bread
- some coriander
Instructions

On the day before, squeeze lime juice and mix 8 tbsp lime juice with 4 tbsp water; freeze in ice cube trays until solid.

Combine tomato juice with Worcestershire sauce, Tabasco, a pinch of salt and pepper; cover and refrigerate.

Peel and finely dice onion. Squeeze lemon; combine 1 tbsp lemon juice with salt, pepper, and diced onion. Set aside olive oil.

Halve the avocado, remove pit. Scoop out flesh with a spoon and cut into strips.

Add avocado to onion mixture, gently stir, and let rest for 15 minutes.

Toast bread in toaster or under a hot oven grill until both sides are golden yellow. Wash coriander, shake dry, and pluck leaves.

Spread avocado on toast slices and sprinkle with coriander.

Place two lime ice cubes in each of two small glasses, pour tomato juice over them. For garnish, lightly wet glass rims and dip into salt.
