Ingredients
- 4 slices of bread (e.g., white or mixed loaf)
- 2 Avocados
- 1 Shallot
- 1 tbsp Lemon Juice
- Salt
- Pepper (freshly ground)
- 2 tbsp pine nuts
- olive oil
- 40 g freshly grated cheese (e.g., Pecorino)
Instructions

Grill, bake, or toast the bread until golden brown.

Peel the avocados, halve them, remove the pits and mash the flesh with a fork. Peel and finely dice the shallot. Mix in lemon juice and season with salt and pepper.

Toast the pine nuts in a dry pan until golden.

Drizzle the toasted bread with a little oil and spread the avocado mixture on top. Sprinkle with pine nuts and garnish with cheese before serving.
