Crostini

Try the delicious Crostini from Spoonsparrow! They always come out well, whether as an appetizer, side or snack in between.
Ingredients
- 2 small red bell peppers
- 30 g coarsely chopped pistachios
- 1 tsp Olive oil
- 30 g freshly grated Parmesan
- Salt
- ground pepper
- 125 g ricotta (Italian fresh cheese)
- 125 g fresh goat cheese
- 1 tsp finely sliced basil
- Salt

- 30 g coarsely chopped pistachios
- 1 small baguette
- 4 tbsp olive oil
Instructions

Quarter the bell peppers, clean them, rinse and dice into small cubes. Mix with pistachios and olive oil. Fold in Parmesan loosely and season with salt and pepper.

Stir ricotta with basil. Season with salt and pepper. Fold in pistachios.

Slice the baguette. Heat olive oil in a large non‑stick pan in batches. Fry the baguette slices until lightly browned on both sides. Spread the toppings onto the slices and arrange all together.
