Ingredients

  • 100 g flour
  • 1 pinch salt
  • 1 Tbsp vanilla sugar
  • 100 ml milk
  • 2 Eggs
  • 100 ml sparkling water
  • 2 tbsp liquid butter
  • butter (for frying)
  • 400 g Strawberries
  • 200 g blackberries
  • 2 tbsp powdered sugar
  • 1 tbsp Lemon Juice
  • 2 peaches

Instructions

    Whisk the flour with salt, vanilla sugar and milk until smooth. Add the eggs, sparkling water and butter, mixing until the batter is silky and not too thick; add a little more milk if needed. Let rest for about 30 minutes.

    Wash and clean the berries. Puree half of the strawberries with powdered sugar and lemon juice, then strain through a sieve. Chop the remaining berries into small pieces. Briefly blanch the peaches, cool them, peel, halve, pit and cut into chunks. Arrange the sliced peaches, chopped strawberries and blackberries on plates and drizzle the strawberry sauce over them.

    Bake four crepes one after another in slightly hot butter until golden brown, about 1 minute per side, preferably in a non-stick or crepe pan. Fold each crepe and serve with the berries.
