Chocolate Pancakes with Pears

Ingredients

  • 100 g flour
  • 1 tbsp sugar
  • 1 tbsp cocoa powder
  • 1 pinch salt
  • 2 Eggs
  • 2 egg yolks
  • 2 tbsp liquid butter
  • 100 ml milk
  • 100 ml water
  • 2 pears
  • 2 tbsp butter
  • 1 tbsp Lemon Juice
  • 2 tbsp raisins
  • 2 tbsp pear jam
  • sugar
  • 3 tbsp almond slivers
  • 1 vanilla pod
  • 150 g whipping cream
  • 1 tbsp powdered sugar
  • 2 tbsp apricot jam
  • grated dark chocolate

Instructions

    For the batter, combine flour, sugar, cocoa powder, salt, eggs, egg yolks and butter. Gradually whisk in milk and water. Let the batter rest for 30 minutes. Wash, peel, core and cube the pears for the filling.

    Heat butter with lemon juice, add pears and raisins. Simmer over low heat for about 10 minutes. Add pear jam and sweeten with sugar to taste. Toast almonds in a dry pan until fragrant, set aside. Split vanilla pod lengthwise, scrape out the seeds, mix into cream and whip with powdered sugar.

    Heat clarified butter in a small pan and bake four crepes sequentially. Spread 1/2 tbsp apricot jam on each crepe. On one half place pears, almond slivers and vanilla cream; fold the other half over. Sprinkle with chocolate shavings.
