Crepe with Coffee and Chocolate

Ingredients

  • 2 Eggs
  • 50 g sugar
  • 200 g Flour
  • 5 tbsp finely grated chocolate
  • 400 ml milk
  • 4 tbsp brewed cold espresso
  • 2 tbsp butter (for frying)
  • powdered sugar (for dusting)
  • dark chocolate shavings (for garnish)
  • 1 carambola (sliced)

Instructions

    Whisk the eggs with sugar, flour and chocolate. Add the milk and espresso and stir until smooth. Let the batter rest for 10 minutes.

    Melt a little butter in a hot pan and pour a small ladleful of batter into it. Tilt and rotate the pan to spread the batter evenly and cook until golden brown. Repeat with remaining batter.

    Arrange the crepes on plates and sprinkle with powdered sugar and chocolate shavings, garnish with carambola slices, and serve.
