Ingredients

  • 75 g rice
  • 1 small cinnamon stick
  • 1 lemon (unpeeled) zest
  • 50 g sugar
  • 1 packet vanilla sugar
  • milk
  • 200 g whipping cream (1 cup)
  • 250 g blueberries
  • 2 tbsp apple jelly (or quince jelly)
  • 2 tbsp chopped pistachios
  • a little mint (for garnish)

Instructions

    Add rice, cinnamon, lemon zest, sugar and vanilla sugar to a pot and pour in milk. Cook gently for 30 minutes, then reduce heat to low and simmer for 10-15 minutes until the liquid is absorbed. Remove the cinnamon stick and lemon zest and let the rice cool.

    Beat the cream stiff and fold it into the rice.

    Rinse the blueberries, wash gently and drain well.

    Heat the apple jelly in a pan and briefly swirl the blueberries in it.

    Place the blueberries on top of the rice, sprinkle with pistachios and garnish with mint.
