Ingredients
- 5 egg whites
- 40 g powdered sugar
- 4 egg yolks
- vanilla beans
- 20 g flour
- 10 g cornstarch
- 30 g Butter
- 2 tbsp vanilla sugar
- 150 ml milk
- powdered sugar (for dusting)
Instructions

Preheat the oven to 200°C. Whip the egg whites in a large bowl, gradually adding powdered sugar until glossy and stiff.

Beat the yolks with vanilla bean flesh. Fold in 3 tbsp of meringue. Add remaining meringue, sift flour and cornstarch over it, then fold gently.

Warm the milk and dissolve vanilla sugar in it.

Grease an oval baking dish with butter and pour the milk into it.

Use a spatula to form four or five large nests from the batter and place them side‑by‑side in the dish.

Bake on the middle rack for 10–12 minutes until golden brown. Dust with powdered sugar before serving.
