Salami Omelette

A fresh and flavorful omelette featuring sliced salami, olives, anchovies, and herbs. Enjoy this dish as part of a vibrant fruit-vegetable meal.

Ingredients

  • 1 Garlic clove
  • 1 yellow bell pepper
  • 4 tbsp Green Olives (pitted)
  • 8 anchovy fillets (in oil)
  • 2 handfuls herbs (e.g., parsley and basil)
  • 10 eggs
  • 75 ml milk
  • 4 tbsp grated Parmesan
  • Salt
  • freshly ground pepper
  • 5 tbsp butter
  • 100 g salami (thin slices)
  • parmesan shavings for garnish

Instructions

    Peel the garlic and slice thinly. Wash, core, and cut the bell pepper into thin strips. Chop the olives and anchovies. Rinse the herbs, dry, and finely chop the leaves. Whisk the eggs with milk, Parmesan, salt, and pepper.

    Heat 1 tbsp butter in a pan and sauté the bell pepper for 2-3 minutes over medium heat. Add the garlic and cook another 1-2 minutes. Remove from the pan. Reheat 1 tbsp butter in the same pan, pour in about one‑quarter of the egg mixture, then top with one‑quarter each of the pepper mix, olives, anchovies, and salami. Sprinkle herbs on top and let it set for about 5 minutes over low heat. Repeat this process to make three more omelettes and serve sprinkled with Parmesan shavings.
