Ingredients
- 4 kohlrabi (with greens)
- 4 apples (Cox Orange)
- 3 tbsp butter
- 1 l vegetable broth
- 400 g heavy cream
- Salt
- Pepper
- Nutmeg (freshly grated)
- walnuts (chopped, for topping)
- 4 slices bread
- 250 g low‑fat quark
- 100 g Sour cream
- Parsley (chopped)
- Salt
- Pepper
Instructions

Wash kohlrabi and apples, set aside the tender greens. Peel kohlrabi and apples, core the apples. Dice both finely and sauté in butter for about 5–7 minutes. Add broth, cover and simmer for 10–15 minutes over medium heat.

Pour in cream, blend everything smooth with an immersion blender. Warm the soup and season with salt, pepper, and nutmeg. Chop the greens and sprinkle over the soup with walnuts.

Mix quark with sour cream until smooth, fold in parsley and season with salt and pepper. Spread onto bread slices and serve alongside.
