Ingredients

  • 1.5 kg soup meat (beef)
  • Salt
  • Pepper
  • 2 Bay leaves
  • 1 tsp seasoned vegetable broth
  • 1 small knollensellerie
  • 1 stalk leek
  • 3 Carrots
  • 2 tbsp sunflower oil
  • parsley

Instructions

    Cut the meat into cubes. Add 1.5-2 l of boiling water to a pressure cooker and add the meat. Season with salt and pepper, add bay leaves and stir in some broth. Cook under pressure for about 15-20 minutes. Meanwhile peel the knollensellerie, clean the leek, and peel the carrots. Slice everything into fine julienne strips. Heat oil in a pan and sauté the vegetables for 2-3 minutes.

    Carefully vent the pressure cooker. Remove the bay leaves. Add the vegetables and simmer for about 5 minutes. Taste again. Wash parsley, pick off stems, and roughly chop. Ladle soup onto preheated plates and serve with parsley.
