Creamy Coriander Soup with Bacon

Ingredients
- 1 onion
- 3 Garlic cloves
- 2 bunches coriander (30 g each)
- 1 bunch parsley (40 g each)
- 1 red bell pepper
- 200 g pork belly bacon
- 1 tbsp plant oil
- 700 ml vegetable broth
- Salt
- ground pepper
- 100 g crème fraîche
- coriander leaves
- 2 tbsp crème fraîche

Peel the onion and garlic, dice finely. Wash coriander and parsley, shake dry and roughly chop. Cut the bell pepper in half, remove seeds and white membranes, dice into 1 cm cubes. Slice bacon into long strips, fry in a hot pan with 1 tbsp oil until crisp, then drain on paper towels.

In the same pan sauté onion and garlic for about 2 minutes, add parsley and coriander, pour in vegetable broth, season with salt and pepper. Simmer all together for 15-20 minutes over medium heat, puree with an immersion blender, stir in crème fraîche. Ladle soup into bowls, top with bacon strips, bell pepper cubes, coriander leaves, and a swirl of crème fraîche. Serve.
