Ingredients

  • 2 carrots
  • 1 stalk Celery
  • 150 g mostly firm potatoes
  • 1 stalk leek
  • 1 onion
  • 2 tbsp Rapeseed oil
  • 1 l vegetable broth
  • 200 g red lentils
  • 180 g smoked pork belly
  • 0.5 handful fresh parsley
  • Lemon juice
  • Salt
  • pepper (ground)

Instructions

    Wash and, if necessary, peel all vegetables. Slice the carrots and celery into rounds, dice the potatoes, and slice the leek. Chop the onion finely.

    Heat oil in a large pot and sauté all vegetables. Deglaze with broth and simmer for about 8 minutes. Add the lentils and simmer for another 10 minutes. Dice the bacon and crisp it in a pan. Drain on kitchen paper. Wash parsley, shake dry, and roughly chop the leaves.

    Season soup with a splash of lemon juice, salt, and pepper. Serve in bowls topped with bacon and parsley.
