Ingredients

  • 3 sour apples
  • 2 tbsp honey
  • 1 untreated lemon (juice and zest)
  • 2 tbsp vanilla sugar
  • 1 Orange (juice)
  • 200 ml whipping cream
  • 200 g yogurt
  • 2 tbsp powdered sugar
  • 2 tbsp chopped pistachios

    Peel, quarter, core the apples and finely grate the quarters. Bring to a boil with honey, lemon juice, zest, vanilla sugar, and orange juice. Simmer for about 10 minutes until thickened, then remove from heat and cool.

    Whip the cream stiffly. Mix yogurt with powdered sugar until smooth and fold in the whipped cream. Layer four glasses first with apple custard, then a layer of cream custard, repeat with apple, and finish with remaining cream custard. Sprinkle pistachios on top before serving.
