Ingredients
- 6 grapefruits
- 500 g sugar (2:1 invert)
- 30 ml gin

Halve the grapefruits, squeeze out the juice, and combine with the sugar in a pot to bring to a boil.

Let it bubble for about 5 minutes, then stir in the gin and pour the jam into prepared jars. Seal tightly and place upside down for 10 minutes before turning right side up and allowing to cool completely. Store in a dark, cool place.
