A variety of fresh fruit ice creams made with simple ingredients and Spoonsparrow-friendly techniques.
Ingredients
- 400 g fruit of choice (washed, peeled if desired, pitted and chopped)
- 100 g sugar
- 1 lime (juice and zest)
- 1 fresh egg white
Instructions

Blend the fruit flesh in a blender until smooth; strain through a fine sieve if needed.

Cook the sugar with 4 tbsp water to make a syrup, let cool, then mix with the puree, lime juice, and zest. Whisk the egg white until stiff peaks form and fold it into the mixture evenly. Pour the fruit mass into a shallow metal pan in the freezer, stirring occasionally to prevent large crystals from forming.

When the mixture is half-frozen, pour it into cups, insert sticks, and freeze for 2–3 hours.

The frozen ice can also be transferred into small molds for ice cubes or similar portions; freeze again for another 2–3 hours.
