Ingredients

  • soft butter (for the pan)
  • 12 sage leaves
  • 180 g soft butter
  • 1 tsp lemon zest (unprocessed)
  • 1 tsp vanilla essence
  • 120 g sugar
  • 50 g honey
  • 3 eggs
  • 1 tsp Baking powder
  • 250 g flour
  • 100 g ground almonds (peeled)
  • 80 ml milk

Instructions

    Preheat the oven to 160°C (320°F) with top and bottom heat. Grease the pan generously with soft butter. Rinse the sage, pat dry, and press the leaves along the rim and base of the pan.

    For the dough, cream the butter with lemon zest, vanilla, sugar, and honey. Gradually fold in the eggs. Mix baking powder with flour and almonds, then stir quickly into the batter. Add milk until a smooth, spreadable dough forms. Pour into the pan and level the surface. Bake for about 30 minutes (test with a toothpick). Remove from oven, let cool briefly, carefully lift out of the pan, and set on a cooling rack.
