Ingredients
- 30 g pine nuts
- 2 Grapefruits
- 1 orange
- 2 tbsp vanilla sugar
- 200 g Greek yogurt
- 100 g Mascarpone
- 150 ml whipping cream
- 1 tbsp sugar

Roast the pine nuts in a dry pan until golden brown, remove and let cool. Peel the grapefruits and orange completely, removing all white pith. Cut the fruit into small cubes between the segments. Squeeze out the remaining juice and add it to the fruit pieces along with the pine nuts and vanilla sugar.

Whisk the yogurt with mascarpone. Beat the cream with sugar until stiff peaks form and fold in. Layer the fruit and cream mixture in glasses, finishing with a top layer of cream. Chill for about 30 minutes before serving.
