Ingredients

  • 200 g cream cheese (unsalted)
  • 80 ml nut liqueur
  • 1 tsp cinnamon powder
  • 1 Tbsp vanilla sugar
  • milk (as needed)
  • 150 ml whipping cream
  • 8 speculaas cookies

Instructions

    Roast the almonds and nuts in butter until golden yellow, turning constantly to ensure even browning. Sprinkle with sugar and continue heating until the sugar melts. Transfer the nuts onto a sheet of parchment paper and let cool.

    For the caramel sauce melt the sugar in a small pot and allow it to caramelize to a golden color. Deglaze with cream and milk, bring the caramel to a boil, then set aside to cool.

    Whisk the cream cheese with half the nut liqueur, cinnamon, vanilla sugar, and enough milk to achieve a thick‑creamy consistency. Beat the whipping cream until stiff peaks form and fold into the mixture. Transfer the cream into a piping bag fitted with a large star tip and chill.

    Crush half of the speculaas cookies and place them in four glasses. Drizzle with the remaining liqueur. Pipe the cream on top. Pour a little caramel sauce over each, sprinkle with caramelized nuts, and insert a speculaas cookie into the cream.
