Layered Rice and Fruit Dessert

Ingredients

  • 100 g long grain rice
  • Salt
  • sugar
  • 200 g strawberries
  • 1 cantaloupe
  • 1 Mango
  • 8 basil leaves
  • 1 vanilla pod
  • 125 g butter
  • 4 tbsp powdered sugar

Instructions

    Cook the long grain rice in plenty of water with salt and a little sugar until al dente, then drain, rinse, and let it dry thoroughly. Wash the strawberries, remove stems, and slice into thin wedges. Peel the cantaloupe, remove seeds, and cut the flesh into not-too-large slices. Peel the mango, separate from pit, and slice into thin wedges. From each fruit type take 4-6 wedges, cube them, and set aside for garnish.

    In four glasses place a spoonful of rice and top with some mango slices. Then layer 2 tbsp of rice and some cantaloupe slices, add another 2 tbsp of rice, and top with strawberry slices. Repeat layers of rice, mango, rice, cantaloupe, and rice. Sprinkle the reserved fruit cubes over the final rice layer.

    Split the vanilla pod, scrape out the seeds, and place in a pot with butter. Melt the butter, cut the vanilla pod into four pieces, add to the pot. Let everything mingle. In another pot caramelize powdered sugar until pale yellow, remove from heat, then add the butter with vanilla, mix well. Spread the vanilla butter over the rice desserts and top each with a piece of vanilla pod for decoration. Finally, finely slice basil and scatter over the desserts.
