Cranberry Muffins

Ingredients
- 200 g Flour
- 50 g cornstarch
- 3 tsp baking powder
- 2 Eggs
- 150 g cane sugar
- 1 pinch salt
- 150 g butter (melted)
- 2 tbsp vanilla sugar
- 200 g Sour Cream
- 150 g dried cranberries
- 100 g powdered sugar
- 2 tbsp cranberry juice

Preheat the oven to 175°C fan-forced. Line a muffin tin with paper cups.

Combine flour and cornstarch in a bowl, then mix in baking powder. In another bowl lightly beat the eggs. Add sugar, salt, melted butter, and vanilla sugar; stir well. Fold in sour cream and then the flour mixture. Finally fold in the cranberries. Spoon batter into the cup cavities.

Bake in the preheated oven for 25-30 minutes until golden brown. Remove from the oven, take out of the tin, and let cool.

Whisk powdered sugar with a little cranberry juice to make a thick glaze, then drizzle over the cooled muffins.
