Muffins with Kiwi and White Chocolate

Ingredients

  • butter (for the molds)
  • Flour (for the molds)
  • 140 g white chocolate
  • 4 kiwis
  • 250 g flour
  • 1 tsp lemon zest (unprocessed)
  • 2 tsp Baking powder
  • 1 egg
  • 75 g sugar
  • 75 ml sunflower oil
  • 250 g plain yogurt
  • flour (to dust)

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat. Grease the muffin tin cavities and dust them with flour.

    Chop the chocolate into small pieces.

    Peel, quarter, and slice the kiwis thinly.

    Combine the flour with lemon zest and baking powder. Whisk the egg with sugar, oil, and yogurt. Fold in the dry mixture until all dry ingredients are moist, then fold in the chocolate and lightly dusted kiwi slices.

    Fill the prepared cups with batter and bake in the preheated oven for about 25 minutes; test with a toothpick.

    Remove the muffins from the oven, let them cool, carefully lift them out of the cavities, and wrap them in paper napkins. Serve with coffee.
