Apple-Chocolate Muffins

Ingredients

  • 100 g dark chocolate
  • 2 Apples
  • 2 tbsp lemon juice
  • 100 g butter
  • 200 ml milk (1.5% fat)
  • 1 egg
  • 100 g Sour cream
  • 100 g sugar
  • 250 g spelt flour
  • 2 tsp cornstarch
  • 1 tbsp baking powder
  • 45 g cocoa powder (3 tbsp)
  • 1 pinch salt
  • paper liners (for the muffin tin)

Instructions

    Chop chocolate into small pieces. Wash, dry, peel, quarter apples, remove cores and grate coarsely. Mix with lemon juice.

    Melt butter in a saucepan, add 50 g chocolate and melt together.

    Whisk milk, egg, sour cream, and sugar with a hand mixer. In a bowl combine spelt flour, cornstarch, baking powder, cocoa powder, and a pinch of salt. Add the milk mixture, chocolate mass, two‑thirds of the apple pieces and remaining chocolate pieces to the dry mix and stir into a smooth batter.

    Line a muffin tin with paper liners. Fill cups, smooth tops, and sprinkle remaining apple pieces on top. Bake at 180 °C (fan 160 °C; gas: level 2–3) in the middle rack for about 25–30 minutes.

    Let the apple‑chocolate muffins cool in the tin for 10 minutes, then remove and cool on a wire rack.
